Head Chef – Lead the Culinary Vision at The Holt Exeter

This spring, The Holt Exeter is launching a brand-new casual dining restaurant in the heart of Exeter. We’re looking for a talented Head Chef to take the lead from day one, shaping our menu, building a high-performing kitchen team and putting The Holt Exeter on the map as a go-to dining destination.

If you’re a passionate chef with a vision for creative and seasonal cooking, and the skills to lead and inspire a team, this is your chance to make your mark.

Your Responsibilities:

  • Oversee all aspects of kitchen operations, ensuring high standards of food preparation and presentation.
  • Lead, manage, and inspire the kitchen team, fostering a collaborative and positive work culture.
  • Ensure compliance with food safety regulations and maintain a clean, organized kitchen.
  • Take ownership of menu development, food production, and inventory management.
  • Train and mentor team members, helping them develop and grow.
  • Work closely with restaurant management to optimise service, costs, and efficiency.

Job Details:

  • Job Type: Full-time
  • Salary: £35,000 – £42,000 per year

Experience:

  • Min 4+ years of cooking in a professional kitchen
  • Min 2+ years in a senior Chef position

The Kitchen Porter’s role is to ensure a consistently high quality catering offering for visitors and clients at The Holt through the management of the catering operations:

  • Food prep
  • Maintaining and organising the potwash
  • Maintaining a supply line to the kitchen
  • Liasing with head/2nd chefs for daily jobs
  • Adhering to all SFBB protocols

Bar Manager

Job Description
The Bar Manager at The Holt will be the driving force behind the bar’s dynamic atmosphere, combining expert knowledge with an engaging presence to create memorable experiences for every guest. As a hands-on leader, you will oversee all aspects of bar service, from crafting exceptional drinks to managing stock and ensuring smooth day-to-day operations. Working alongside your colleagues, you will set the pace and standard, fostering a collaborative environment that emphasises quality and efficiency. With a keen eye for detail and a passion for hospitality, the Bar Manager is instrumental in shaping the Holt’s identity and maintaining its reputation as a vibrant, welcoming space.

Requirements and responsibilities:

  • Excellent communicator
  • Good knowledge and understanding of the till system
  • Setting up the bar in accordance to the shift
  • Making sure the daily job list is completed
  • Preparing Alcoholic/non alcoholic drinks
  • Interacting with customers
  • Assessing customer needs/Age/Sobriety/Preferences
  • Good knowledge of wine list and drink options
  • Good knowledge of all the food menus and options
  • Answering the phone taking bookings accurately
  • Taking food and drink orders where necessary
  • Restocking and replenishing , communicating where stock is low
  • Communicating well with the host/Kitchen/Fellow bar staff
  • Where there is a problem , making sure that it is communicated to the host or a senior member of staff so that it can be dealt with accordingly

Floor Manager

Job Description
The Floor Manager at The Holt ensures the heartbeat of the restaurant runs smoothly, delivering an exceptional dining experience for every guest. Acting as the key link between the kitchen, bar, and front-of-house team, you will coordinate service with precision and grace. On the floor you will lead by example—engaging with customers, supporting staff, and maintaining a welcoming and professional atmosphere. With a sharp focus on details and a natural flair for hospitality, the Floor Manager is pivotal in upholding The Holt’s high standards and creating a seamless, enjoyable experience for all.

Requirements and responsibilities:

  • Excellent communicator
  • Good knowledge and understanding of the till system
  • Taking customer orders and delivering food drinks
  • Menu/wine list/ recommendations
  • Good knowledge of menu and ingredients
  • Answering the phone taking bookings accurately
  • Hosting customers to their tables
  • Making table plans and communicating customer requirements to staff and the kitchen
  • Setting up sections and delegating accordingly
  • Good communications with customers and fellow staff
  • Setting up the restaurant in accordance with lunch evening service

  • Follow all relevant health department regulations
